Friday August 22nd, check in to your Poolside King Suite before joining us for an unforgettable evening celebrating the diversity of NSW’s finest produce. The experience begins with the live carving of whole big-eyed tuna, presented by Executive Chef Quim Hernandez and Prendiville Group Director of Food Russell Blaikie, followed by Sydney rock oysters, barramundi, blue swimmer crab ravioli, kangaroo and Guinness pot pie, and more.
A curated selection of wines from across the Hunter Valley completes the evening, marking the grand finale of our four-part celebration of Australia’s distinctive flavours,ingredients, and regional stories.

- No refunds will be offered should ticket holders not attend the event at Samphire. Any cancellations within **14 days** of the event will incur the full price of the ticket(s).
